Beer acts as a weak acid, dissolving the lime in the concrete, giving bacteria the opportunity to grow in the porosity of the concrete by feeding off the sugars that soak in.

The key to preventing this build up is using the washdown process.  The area is cleaned of dirt, residue, and debris by the use of the force, heat, and dissolving power of stream of water as projected from a hose, typically at a pressure of around 300 psi. The hose itself usually varies in length from 25 to 150 feet.
